The pancakes are a dessert, much known in Argentina, they are very easy to prepare and are liked for grown and children, and especially for lovers of the dulce de leche (sweet milk jam).
However, traditionally are served with dulce de leche, their filling are most varied: whipped cream, apple, toffee fruits, etc.

Basic batter recipe for pancakes
Ingredients:
- 3 eggs.
- Flour ¾ kilo.
- Milk ½ liter.
Procedure:
It can be made manually or with the blender, but the last option is better, faster and easily.
Put the eggs in a bowl, add a bit of milk and beat till well blended, while blending, add the flour as rain, interspersing the rest of the milk, till finish both ingredients.

The batter should be homogeneous: liquid but thick, dense.
After that, heat a pancake maker or a little frying pan, with a little piece of butter. Take the batter with a ladle and pour it over the hot frying pan, moving it to make the batter cover the bottom. (If the ladle is big, return what is left to the bowl with the rest of the batter).
Leave the pancake some minutes, and using a knife or spoonbill, turn the pancake to cook it to the other side. Take it out and cook another pancake.
While cooking the pancakes is better to put them one over another so they maintain the heat. Finally, anoint each pancake with dulce de leche, roll it and serve.
Tips for the perfect pancakes
Pancake mix. The pancake batter should be nor liquid nor thick. If it is to liquid, add more flour and blend. If it is thick, instead, add more milk and mix again.
Filling the pancake. Not only dulce de leche is good to fill the pancakes. They are very tasty filled with caramel apples with whipped cream.
The Frying pan. If you are using a nonstick pan, put butter only the first time, if it is not a nonstick pan, use butter each time you cook a pancake.
Other uses. As this batter has no sugar or salt, these pancakes can be use to salty and sweet meals, like cannelloni or fajitas.

How to freeze pancakes. Pancakes can be frozen for 3 month without losing their natural texture. To do that: group together 5 or 10 pancakes (according to how many you will use when you unfreeze them). Between each group use a separator. When you take out the pancakes out of the freezer, put them into the fridge, so they can unfreeze naturally, but if you are in a hurry, you can use the microwave.
