Three recipes to make garlic sauce

The garlic sauce also known as “garlic mayonnaise” is a delicious dressing and very easy to make. In this article, you will learn how to make a healthy, tasty and spicy garlic sauce to season meat, raw or cooked vegetables, tasty breads and snacks to taste before a big barbeque with friends.

How to make a classic garlic sauce

In order to make one single garlic sauce you need 6 big garlic cloves, one egg (you can use the whole egg or just its yolk. However, there are some people you prefer to use the egg white only in order to reduce cholesterol), a teaspoon of lemon juice, salt, freshly ground black pepper, 250 to 350 cm3 oil (you can use olive oil, sunflower oil, mixed oil, etc, always a vegetable oil), a teaspoon of mustard and a small chilli (in case you prefer a sweet one you can use it).

Also, you need a blender or a mixer, a kitchen spatula, a mortar and pestle or a garlic tweezers (or a cutting board and a knife, instead), and a slice of bread to try the sauce as soon as you make it.

Start preparing all ingredients by measuring the needed quantities and by peeling and by crushing the garlic cloves.

Blend the garlic cloves with the lemon juice for some minutes. Once it has emulsified, add the egg without delay (the whole egg, the yolk or the egg white, as you prefer) with a pinch of salt with constantly blending. Then, add the freshly ground black pepper, the teaspoon of mustard and the chilli.

Keep blending the ingredients until the preparation is well emulsified. Then, add the oil slowly. It is important to add the oil slowly to prevent it from separating. You can stop blending as soon as you reach the chosen point of the sauce, then place it in a sauce dish with some mustard seeds and parsley leaves for everyone to enjoy.

Fast garlic sauce

If you do not have time to make the homemade garlic sauce, you can prepare the fast garlic sauce following these tips. Place some mayonnaise with cream cheese in equal parts in a blender or mixer. Then, while blending, add four of five crushed or chopped garlic cloves and some lemon juice drops and freshly ground black or white pepper to flavor the sauce.

Gourmet garlic sauce

Finally, you will learn a more laborious version of the classic garlic sauce. Place two tablespoons of butter in a pan at a low heat until it melts and add two teaspoons of flour. Then, mix the ingredients quickly with a wooden spoon until it reach a slight golden color. Add five or six crushed or chopped garlic cloves and let them cook in the whole preparation.

Without removing from the heat (three or four minutes later) add 1 or 1 ½ cups of milk and stir until boiling. After that, remove the pan from the heat and add an egg yolk. Mix well while it is cooked with residual heat. To conclude, add salt and pepper to taste and let it warm or cool in a sauce dish or deep plate.
