This dish is a Chinese classic. It is a tasty, easy and fast dish to make. The meaning of the word chop suey is “mixed bits and pieces” making reference to the heart of this dish. It has many varieties, so you can make it with pork o red meat, as well. Some people add garlic, celery, ginger and peppers. However, this recipe is less spicy, softer and it´s main ingredient is chicken.

Chicken Chop suey (2-4 portions)
Ingredients:
- 1 chicken breast cut into cubes.
- 2 carrots cut into julienne style.
- 2 onions cut into rings.
- 1 green or red pepper cut into julienne style.
- ½ white cabbage cut into julienne style.
- 1 handful of soybean sprouts.
- Oil.
- Soy sauce.
- Salt.
Chop Suey Preparation
Pour 3 tablespoons of oil in a pan at high heat. Once the oil is hot, add the vegetables in the following order: carrots, peppers, cabbage, soybean sprouts, onions, and finally the chicken. Wait one minute approximately while each vegetable is cooked.
After that, add salt and stir. Then, add the chicken pieces and a bit of soy sauce. Keep stirring until the chicken is cooked.
Vegetables should be half cooked (crispy). Also, if the preparation is dry, add more soy sauce.
You can serve this dish accompanied with white rice, spring rolls and the soy sauce to dress.
Rice Preparation
Sautee a cup of white rice in 2 tablespoons of oil in a big pan.Then, when the rice gets whiter, add 2 cups of cold water and a pinch of salt. As soon as the water runs out, the rice is ready. Always do the rice cooking process at high heat.
